Creamy Mushrooms on Toast

- 25g/1oz or 2 tbsp butter or margarine plus extra for spreading
- 2-3 finely chopped spring onions
- 1.5ml/1 tbsp lemon juice
- 75g/3oz mushrooms, sliced
- 5 ml/1 tsp cornflour (cornstarch)
- 120 ml/4 fl oz creme fraiche (low fat is good) or a vegetarian alternative
- 5 ml/1 tsp curry paste
- salt & pepper for seasoning
- 1 slice of wholemeal bread or 2-3 thin slices of baguette/sour dough bread
- and if you have it to hand, fresh parsley to garnish (not essential)
Easy Creamy Mushrooms on Toast recipe for one
Deliciously decadent, but healthy creamy mushrooms on toast in less than 15 minutes. A fast and filling lunch or snack packed full of flavour.
- Melt the butter or margarine in a saucepan, add the onions and fry (saute) gently until soft.
- Add the lemon juice and mushrooms and cook gently for 3 minutes
- Sir in the cornflour and cook, stirring for a further minute
- Gradually add the creme fraiche, cooking very gently until thickened, without allowing the sauce to boil
- Add the curry paste and season with salt and pepper to taste
- Toast and butter the bread, then top with the mushroom mixture. Garnish with fresh parsley sprigs
Cooks Tip
Although cap or button mushrooms are great for this recipe why not take this as an opportunity to try some of the more unusual varieties now also readily available like Swiss or Roman brown mushrooms which have a firmer texture and a nutty flavour
