Leeky Salmon in a Parcel

- 1 salmon fillet (around 140g/5oz)
- 1 small leek
- small handful of frozen peas or petits pois
- 3 heaped tbsp crème fraîche – 2 for the sauce and one for the garnish (healthier low fat crème fraîche works equally as well)
- 1 tbsp chopped fresh tarragon
- new potatoes – enough to serve with the salmon.
You’ll also need some greaseproof paper
Three easy steps to a simple light dish that can be prepared a few hours ahead and then cooked in the microwave when you’re ready to eat.
- Season the salmon fillet all over and slice the leek really thinly
- Cut a square sheet of around 40cm/16inch from the greaseproof paper, place the salmon fillet in the middle the sheet. Top with leeks and peas, and 2 tbsp of the crème fraîche. Sprinkle with tarragon and a salt and pepper to taste.
- Seal the paper parcel and stand on a microwave proof plate or tray. Microwave on full power for 5 minutes. Put the contents of the parcel on your serving plate, topping it off with a spoonful of crème fraîche. Serve with new potatoes topped with a slither of butter. Truly simple & delicious.
