Pan Toasted Salmon & Cheese Sandwich

Get your seafood fix with this super tasting salmon & cheese combo toastie
- Small portion of freshly cooked salmon (flaked) or half a small 210g can of red salmon, drained and flaked (with any skin and bones removed)
- 1 small spring onion, ends trimmed, finely chopped
- 1 tablespoon reduced-fat mayonnaise
- 2 slices wholegrain bread
- 2 slices of Swiss Emmental or similar light mild tasting cheese
- 10g baby spinach leaves
- Enough butter to spread on the outside of each slice of bread – (at room temperature)
- Salt & freshly ground black pepper to taste

- Preheat your oven to 180°C and line a baking tray with non-stick baking paper.
- Combine the salmon, spring onion and mayonnaise in a bowl. Season to taste with salt and pepper.
- Place 2 slices of bread on a clean work surface and top one slice of bread with 1 slice of cheese, spinach leaves, salmon mixture and then the remaining cheese slice. Top with second slice of bread and press down gently
- Spread the outside of sandwiches with butter. Heat a non-stick frying pan over medium heat and add the sandwiches, cooking for around 2 minutes each side until golden. Transfer to prepared tray and bake in your preheated oven for 5 minutes or until cheese melts. Cut the toasted sandwich in half and serve straight away.
Works really well with a small side salad for a really tasty lunch or light dinner.
