Super Healthy Black Bean Burgers

- 200g/8oz – equivalent to around half a 400g tin of well drained black beans or kidney beans
- 1 tbsp of light olive oil (or similar cooking oil)
- ½ medium red onion – finely chopped
- 70g/2-3oz finely chopped mushrooms
- 1 tablespoon soy sauce
- small or half a large clove of garlic – finely chopped
- ½ tablespoon chopped fresh parsley or ½ tablespoon dried mixed herbs
- 1 small spring onion, finely chopped
- 2 tablespoons of plain flour
- Optional Ingredients
- small pinch of chilli flakes
- ¼ teaspoon Marmite
Black pepper/seasoning to taste
Home made quick and easy black bean burgers, easily spiced up to taste. A healthy veggie and vegan alternative to beefburgers, not to mention better than the freezer section of your local supermarket.
- If you’ve got time, spread the beans evenly onto an oven dish and bake on a low heat (16o°C/325°F) for 10-15 minutes until they dry out, – (if you haven’t, skip this bit) and then roughly mash up the beans with a potato masher; taking care not too over mash them as you need to keep some texture.
- In the meantime, heat the oil in a medium frying pan, saute the finely chopped onion for 3 minutes, then add the mushrooms and soy sauce, frying for a few more minutes until almost all the mushroom juice has evaporated.
- Stir in the garlic, herbs, spring onion,chilli flakes and mashed beans. let the entire mixture cook for 2 minutes, stirring often.
- Transfer the mixture into a bowl and leave to cool a bit before mixing in the flour and (optional) Marmite and season to taste.
- Divide the mixture into 3 portions (this is the best bit :-),using your hands to shape up the uncooked burger; about 1.5 cm thick & 8 cm wide works well.
- Fry the one or two you want to eat for about 2 minutes on both sides over a medium heat. Freeze the rest.
Cooks Tip:
Although you can cook them straight away they cook best when they’ve been chilled or frozen. Eat sandwiched between a burger bun with all the toppings you like, don’t skimp! ketchup, mayo, pickles , sliced tomato, cucumber etc.
