Vegetarian Hot Pot for one

Vegetarian Hot Pot recipe for one. Simple winter warming recipe with a slight twist.
- 1/2 tbsp sunflower oil
- 75g red lentils, cooked
- 250g leeks
- 1 small onion
- 100g swede, cubed
- 100g carrots, cubed
- 14g plain flour
- 1/2 tbsp tomato puree
- 1/2 tbsp yeast extract
- 1/2 small eating apple
- 250g potatoes
- 200g can butter beans
- 1/2 tbsp butter or low fat alternative
- 20g grated cheese or vegan equivalent
- 1 stock cube and seasoning to taste
- Sweat* the leeks, onion, swede and carrots over low until the root vegetables soften a little
- Mix the flour and tomato puree with a little stock to form a paste. Add the yeast extract (marmite), salt and pepper.
- Chop up the apple and a few cubes of potato and add to the other vegetables with the cooked red lentils.
- Put all the ingredients into a slow cooker (or casserole dish if you haven’t got one), and add the stock. Cover with the sliced potatoes, dot with butter or a low fat alternative and sprinkle over the cheese.
- Cook until tender and brown under a grill if needed.
This recipe is enough for two, so enough for two days or enough to share with a friend.
*Sweating is when you heat the vegetables very gently in a little oil or butter, stirring frequently so that any liquid can evaporate; – it normally results in tender and almost transparent pieces.
