Crispy Chilli Beef

- 100g/4oz thin-cut frying steak, – sliced into very thin strips
- Oil for cooking
- 1 tablespoon cornflour
- ½ tsp Chinese five-spice powder
- ½ red pepper, deseeded and thinly sliced
- ½ red chilli, also deseeded and thinly sliced
- 2 spring onions, green and white parts separated & sliced
- 1 small garlic clove, crushed
- 2.5cm/1 inch piece of ginger, peeled & cut into matchsticks
- 1 tbsp rice one wine vinegar or white wine vinegar
- ½ tbsp soy sauce
- 1 tbsp sweet chilli sauce
- 1 tbsp tomato ketchup

Did you know………. that made with flour and eggs, the dough for egg noodles is rolled thin, cut into strips and cooked in boiling water.
Although you can easily make your own, thankfully the standard pre-cooked version we all use is really easy to prepare and cooks in a few minutes, so its cheaper as chips and perfect for Chinese recipes. Use a ready portioned nest of noodles or just break off what you need, so there’s no waste for one person. Simmer or cover with boiled water for around 4-5 minutes, drain – and thats it, its done.
Crispy Chilli Beef Recipe for one? – grab yourself a chinese takeaway for one. Have a go and magic up this authentic Chinese flash-fried steak with a sweet, ginger sauce and red peppers.
- Put the thin-cut minute steak strips in a bowl and toss in the cornflour and Chinese five-spice powder making sure the strips are covered. Heat the oil in a wok or large frying plan until really hot then add the beef and fry until golden and crisp. Scoop out the beef and drain on kitchen paper. Pour away all but 1 tbsp oil.
- Add the thinly sliced red pepper, red chilli (reserving some for garnish), sliced white ends of the spring onions, crushed garlic cloves and ginger matchsticks,to the pan. Stir-fry for 3 mins to soften, taking care not to burn the garlic and ginger. Mix the rice wine vinegar or white wine vinegar, soy sauce, sweet chilli sauce and 2 tbsp tomato ketchup in a jug with half a tablespoon of water, then pour over the veg.
- Let all ingredients bubble for 2 mins, then add the beef back to the pan and toss well to coat.
Serve on a bed of noodles (or rice), garnish with the remaining thinly sliced red chilli and sliced green parts of the spring onions. Also works well with Prawn Crackers as an option.
