Chilli Cheese Omelette

Easy recipe omelette with a twist, quick easy and versatile recipe for one for lunch, supper or even a special breakfast
- 2 large eggs
- 1 tbsp of sunflower (or similar) oil
- 25g grated cheddar (mild cheddar works best if you have it)
- 1 spring onion
- 1/2 – 1 tsp of chopped red chilli (or a generous pinch of dried chilli flakes)
- Few sprigs of coriander
- Chop the spring onion and coriander quite finely and beat the eggs together and season with salt and pepper.
- Heat the oil in a small frying pan then tip in the onion, coriander and chilli and stir round the pan for a second or two so they soften a little.
- Pour in the eggs and keep them moving until about two thirds have scrambled.
- Bring the eggs back down on the base of the pan, scatter the grated cheese over the top and cook for about a minute until the omelette is just set and the cheese has melted.
- Carefully fold the omelette using a palette knife and slide from the pan to a serving plate. Eat straight away, while the omelette is hot and cheese is still melted.
Hot Tip!
Want to make your omelette really fluffy? Beat the whites until fluffy, then fold in the lightly-beaten yolks. (Doesn’t take very long if you’ve got a mixer or a hand blender handy).
