Classic Pancakes: Recipe for one

Check out this super simple failsafe pancake recipe that’s just enough for one
- 1 egg (or 2 if you want to make some & freeze some)
- 3 tablespoons plain flour (per egg)
- 5 tablespoons milk (per egg)
- Small knob of butter
- Your choice of topping – lemon, syrup, jam, healthier berries and Greek yoghurt whatever you like – the variations are endless.
- Mix the egg, flour and milk into a bowl until free of any lumps
- Put a small knob of butter in the frying pan, heat through until the butter melts covers the bottom of the pan and starts to sizzle
- Pour enough mixture into the pan to cover the bottom and fry until light brown
- Flip the pancake, make another one and eat with your choice of topping.Works best with a small frying pan or crepe pan if you have one.
COOKS TIP
If you don’t eat them first you can make and freeze just about any kind of pancake (without the topping) for up to 2 months. Let them cool completely once they are cooked through and layer between sheets of waxed paper in a freezer container or bag. Let them thaw out naturally before you reheat them for best results
