What is Béarnaise Sauce?

First created by a French chef around 1836 who wisely named the sauce after the Béarn region in France, Henry IVs birth place. (Good career move!). Renowned as a classic sauce, Béarnaise Sauce is made with a reduction of vinegar, white wine, tarragon, black peppercorns and shallots, finished off with egg yolks and butter. Bearnaise sauce can be served with any plain meat or fish.

This version is a lot quicker, easier and healthier. Enjoy!

Tarragon is a herb from the sunflower family, its quick to grow and likes sunny climates.  Foodies will know that it has quite an intense flavour, sweet peppery with just a hint of vanilla and aniseed. Recipes normally advise to use it  quite sparingly.  Goes well with all sorts; chicken, fish, eggs and cheese recipes, also used in salad dressings.
