Stir Fried Beef in Oyster Sauce

Delicious quick and easy Chinese recipe for one
- 100g/4oz rump, sirlion or fillet steak
- 15ml/1 tsp sunflower or vegetable oil
- 1 green (bell) pepper, seeded and thinly sliced
- 45ml/3 tsp oyster sauce
- Plain rice to serve
- Cut the steak into thin strips
- Heat the oil in a frying pan, skillet or wok. When its really hot, add the sliced meat and fry or saute for 3 minutes, stirring all the time.
- Add the sliced pepper and continue frying for 2 more minutes.
- Turn the heat down and add the oyster sauce. Heat through gently for a further 5 minutes. Serve with rice or noodles.
Little Extra Tip – add in any green veggies you have in the fridge like broccoli, green beans sugar snap peas and/peppers to add in some relatively low calorie extras in the last two or three minutes of cooking so that they’re just cooked but a bit crunchy. You can also sprinkle over some sesame seeds to make it look extra posh.

What is oyster sauce?
Oyster sauce is a general term describing a number of sauces made by cooking oysters. The most common in modern cooking use is a relatively thick dark brown condiment made from sugar, salt and water thickened with corn flour and flavoured with a little oyster essence or extract, so the better quality sauce you buy, the more oyster essence or extract you get.
A rich sauce made from boiled oysters and seasonings, oyster sauce does not have a fishy taste at all (boiling the oysters takes care of that). A rich sauce with a savoury flavour it’s also used in meat and vegetable dishes, as well as being an important ingredient in Cantonese cooking
