Stir Fry Chilli Beef Wrap

Buying a thin slice of frying steak from the meat counter for this recipe will cost you half the price of a large pack and will literally cook in minutes. Stretch your steak a little further by adding lots of peppers, tomatoes and black beans or convert into a more substantial meal by serving with rice instead of tortillas.

- 75g/2.5 oz of very thinly sliced thin cut frying steak
- Half tsp mild chilli powder
- Good pinch of ground cumin
- 1 garlic clove, finely chopped
- 1 tsp sunflower oil
- Half yellow pepper, deseeded and sliced
- Half red onion, thinly sliced
- 1 tomato, chopped
- Half x 400g can black beans, drained
- Handful fresh coriander
- 2 soft tortilla wraps
- Put the steak in a bowl with the spices and garlic, and stir well and leave to marinate for a couple of hours if you have time. Heat the oil in a wok, then tip in the beef and fry for just 1-2 mins, until it changes colour but is still on the rare side. Remove the beef to a plate.
- Add the pepper and half the red onion, and stir-fry in the juices – add a splash of water to get things going and stop it burning. Stir in the tomatoes and beans, and heat through with plenty of seasoning, then stir in most of the coriander.
- Meanwhile, heat the tortilla wraps. The best way to heat wraps is directly on the gas flame as it gives them a lovely charred flavour, but be careful. Stir the beef into the beans and heat briefly. Serve with the tortillas and the rest of the onion and coriander.
