Super nutritious vegetarian toasted club sandwich, all round meal for one
- 3 slices of bread (granary works best if you have it)
- 1 large handful of watercress
- 1 carrot – peeled and coarsely grated
- small squeeze of lemon juice
- 1 tbsp olive oil
- 2 dessertspoons of reduced-fat houmous
- 2 thickly sliced tomatoes
- Toast the bread and mix the watercress, carrot and lemon juice and olive oil together in a small bowl.
- Spread the houmous over each slice of toast.
- Top 1 slice with the watercress and carrot salad, sandwich with another slice of toast and top with the tomato.
- Lay the final slice of bread, houmous side down on top, then press down and eat as it is, or cut the sandwich into quarters, – looks great if you use 4 cocktail sticks to keep it all together.
Could always serve with a small bowl of soup if you’re really hungry.
What is houmous?
Houmous or hummus is a Levantine and Egyptian food dip or spread made from cooked, mashed chickpeas or other beans, blended with tahini (a paste made with sesame seeds), olive oil, lemon juice, salt and garlic, – and tastes much nicer than it sounds and comes in all sorts of varieties with added spices and vegetables. Its also really easy to make your own; tip a can of rinsed chickpeas into a food processor. Add all the remaining ingredients; half a tsp of ground cumin, 1 crushed garlic clove, juice of a lemon and 3 tbsp cold water and mix up together. Keep adding water, a tbsp or so at a time, until you get a smooth spoonable paste. Tip into a bowl and serve. Can be kept in the fridge for up to 3 days.
