Brian Turner’s Chicken Curry

Tasty curry recipe for one, perfect for solo cooking on a budget, – not to mention quicker than a trip to an expensive takeaway
- 1 tbsp olive oil
- ½ onion, diced
- 100g/3½oz boneless chicken thighs, diced
- 1 tsp curry powder
- pinch of chilli powder
- ½ tsp turmeric
- 70g/2½oz peas
- Heat the oil in a pan and gently fry the onion for a few minutes to soften, (when it looks transparent)
- Add the chicken and fry until the chicken is browned all over.
- Add the curry powder, chilli powder and turmeric and stir to coat the chicken in the amazing spices.
- Stir in the peas with about 70ml/2½ fl oz of water, then reduce the heat simmer gently for 10-12 minutes, or until the chicken is cooked through.
- Remover from heat and serve with rice, (basmati rice or whatever long grain rice you have), naan bread or any pickles or chutneys you have to hand or can improvise with.

Mix some chopped mint leaves and chopped cucumber up in small dish with a pinch of cayenne, paprika and cumin with salt and pepper, add some plan natural yogurt for a simple Cucumber Mint Raita, a great tasting accompaniment for any hot curry.

Cheaper than chicken breasts, chicken thighs are considered to have more flavour, so they’re great for cooking tasty chicken dishes on a budget. Here’s how to bone one in just over a minute:
1. Put the thigh skin down onto your chopping board. You should now see the two ends of the bone sticking out
2. Cut along the line of the bone from one end to another with a sharp knife
3. Take the knife down the side of the bone to separate the chicken meat from the bone, so you have enough room to get your fingers underneath the bone
4. Cut around each end of the bone, freeing up the meat from the bone. Its done!
